~ A WORD ABOUT OUR RICE AND SOY SAUCE ~
- We use Japanese Tamanishiki short grain rice the highest quality in the world
- Our soy sauce, Shouyu, is my family's original recipe. It is well matched for all our dishes and particularly well suited for our sashimi and sushi.
- Our Tofu is America's Finest from Denver Tofu Co. No preservatives. It is Nigari from Japan. Nigari is a coagulant used in solidifying soy a natural occurring mineral extracted from water.
